Spicy Chicken Tacos
Ingredients
- 1 lb (450g) boneless, skinless chicken breast, cubed
- 1/2 cup (100g) all-purpose flour
- 1 tsp paprika
- 1 tsp cumin
- 1/2 tsp cayenne pepper (adjust to taste)
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 egg, beaten
- 2 tbsp olive oil
- 8-10 large flour tortillas
- 1/2 cup (50g) shredded Mexican cheese
- 1/2 cup (60g) chopped fresh cilantro
- 2 tbsp lime juice, divided
- 2 tbsp chopped fresh jalapeño, for garnish (optional)
Instructions

1. Season and cook the chicken: In a bowl, mix together flour, paprika, cumin, cayenne pepper, garlic powder, salt, and pepper. Add the beaten egg and stir until just combined. Add the chicken cubes and toss to coat. Heat 1 tbsp of olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes per side, or until golden brown and cooked through. Remove from the skillet and set aside.

2. Prepare the tortillas: Warm the remaining 1 tbsp of olive oil in the same skillet over medium heat. Add the tortillas, one at a time, and warm them on each side for about 30 seconds to 1 minute, until pliable and warm. Be careful not to burn them.

3. Assemble the tacos: Divide the cooked chicken among the warm tortillas. Top each taco with 1/4 cup of shredded cheese, chopped cilantro, and 1 tbsp of lime juice. If you like a spicy kick, add a few slices of the jalapeño. Serve immediately.

4. Serving Tip: For a fresh touch, you can serve the tacos with a side of guacamole or salsa.
