Creamy Tomato Pasta

Ingredients

  • 1 lb (450g) spaghetti
  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Fresh basil, chopped (optional)
  • Grated Parmesan cheese, for serving

Instructions

  1. 1. Cook the spaghetti according to package instructions until al dente. Drain, reserving about 1/2 cup of pasta water.
  2. 2. In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until softened, about 3-4 minutes.
  3. 3. Add minced garlic and cook for another 1-2 minutes, until fragrant.
  4. 4. Pour in the crushed tomatoes, salt, and pepper. Simmer for 10-15 minutes, stirring occasionally, until the sauce thickens slightly.
  5. 5. Stir in the heavy cream and simmer for another 2-3 minutes, ensuring the sauce is hot but not boiling.
  6. 6. Add the cooked spaghetti to the skillet, tossing to coat evenly with the sauce. If the pasta seems dry, add a splash of reserved pasta water.
  7. 7. Garnish with fresh basil and grated Parmesan cheese before serving. Enjoy!

I made this last night and it was delicious. My kids loved it too! The only thing I did differently was add a bit of red pepper flakes for heat.
