A comforting and quick dish, perfect for a weeknight meal. This classic chicken pasta is packed with flavor and easy to customize.

Serves 4 Main Course Poultry

Ingredients

  • 1 lb Boneless, skinless chicken breasts
  • 8 oz Penne pasta
  • 2 tbsp Olive oil
  • 2 cloves Garlic, minced
  • 1 cup Heavy cream
  • 1/2 cup Grated Parmesan cheese
  • Salt and pepper
  • Fresh basil, chopped (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Drain.
  2. In a large skillet, heat olive oil over medium-high heat. Add chicken breasts, season with salt and pepper, and cook until golden brown and cooked through, about 6-8 minutes per side. Remove chicken and set aside.
  3. In the same skillet, add minced garlic and sauté for 1-2 minutes until fragrant. Pour in heavy cream and bring to a simmer.
  4. Stir in grated Parmesan cheese until melted and the sauce is smooth. Season with salt and pepper to taste.
  5. Add cooked pasta to the skillet with the sauce, tossing to coat evenly. If the sauce is too thick, add a splash of pasta water to loosen it.
  6. Return cooked chicken to the skillet, gently toss to combine with pasta and sauce. Garnish with fresh basil, if desired, and serve immediately.

"Great recipe, but I found the chicken a bit dry. Maybe next time I'll marinate it for a while before cooking."
